自家製イクラ、我が家の漬け汁のレシピ

我が家では毎年、北海道から2～3kgの生筋子を買って「イクラの会」をします。
当初はほぐすのに時間がかかったり、たくさん潰してしまったりもしましたが、いまでは楽々。ほぐすのはわたしではなく夫ですが、2㎏なら10分かからずに処理します。

1．ボウルの上に置いたバーベキュー用の網に生筋子をかなりの力でなすりつけてほぐす。

2．残りは割りばしでからめとるようにほぐす。

という2ステップ。

漬け汁を作るのはわたしの担当です。これも「醤油だけ」とかいろいろ試しましたが、ようやく完成しました。

【3㎏分の漬け汁】

  • 国産無添加醤油　250ml
  • かき醤油　200ml
  • 鮭魚醤（なければ醤油を増やす）　150ml
  • 煮切り純米酒　300ml
  • 高級なダシ昆布　10cm角くらい

うちは北海道の「シーレッシュ」から取り寄せるのですが、鮭魚醤（魚々紫）はそこで一緒に買います。筋子は鮭なので、相性はバッチリ！でも最近はいろんな魚醤がわりと出回っているし、大さじ1ほどナンプラーを入れてもおいしかったです。

さて、おいしいイクラが完成したら、毎年恒例のイクラの会です。

友達を呼んで、とにかくイクラを食べてお酒を飲む会。

イクラの会名物は、なんといってもこの「イクラのボトル」！

このように使います。

ちなみに、乾杯もイクラです。

サラダにもイクラ。

白飯にも、餃子にもイクラ。

もちろん手巻き寿司コーナーあり（タンスの上）。

自分でイクラ軍艦！

これは仙台名物のはらこめし。
焼いた秋鮭をほぐした混ぜご飯にイクラをトッピングします。

イクラだけだとお腹がいっぱいにならないので、肉料理も何か用意します。
派手に見えて手のかからないもの。
